We make sure that the coconut meat has optimum quality: colour, smell, hygiene status, detection of foreign matter, among other criteria.
First round of microbial load reduction, removal of foreign matter in order to improve storage conditions and delay decomposition.
The desired granularity of the product is achieved in this stage.
Elimination of all microorganisms present in the pulp through the application of heat, pressure and residence time.
In this stage, the pulp moisture is reduced to a range between 28 and 32%.
Depending on the desired final presentation, pre-dehydrated pulp is mixed with complimentary ingredients: sugar, corn starch, flavors, dyes, and others.
Humidity of the premixed product is reduced to a range between 3.0 and 3.5%

FSSC22000 Food Safety Management System.
Developed by the Foundation for the Certification of Food Safety, FSSC 22000 is a complete-certification scheme based on the ISO 22000 standard, the International Food Safety System, combined with one of the technical specifications (for example ISO / TS 22002-1 or PAS 223 / ISO / TS 22002-4) and additional requirements of the Global Food Safety Initiative (GFSI). FSSC22000 has received full recognition by GFSI.
